I just typed in my meal for today..?

Well to gain weight, you have to eat more than 2500 calories. But of course everyone is different, but in general that is how much you should eat to maintain your weight. 1 lb is 3500 calories. And if you that much calories everyday, you gain 1 pound every week. Again everyone is different so everyone has different speed of metabolism and amount of physical activity. But if you went over your calorie rate for 2 or 3 days, don't be discouraged. Keep trying to do your diet regularly. And don't go too over the top with it because your body isn't used to taking so little calories than what it usually takes. So if you used to take 2500 everyday, just remove 500 calories from your diet. And if you start doing that regularly, take out 800, But I recommend that you should only go that far. Take out too much calories from your diet and your body wouldn't be able to adjust. So yeah, hope I helped you out . :)
