Does anyone have a recipe for Bumblebee stew?

I had this at the KY Derby this spring. It's got stewed tomatoes, black beans, and yellow corn. I think a bit of onion, some spices. Fairly sweet, but a little kick. Does anyone have a recipe for something like this?
